One of the hardest things for someone who is suffering with diabetes to deal with is food. As a diabetic you have to constantly watch what you are eating. You need to be vigilant, constantly aware of food and how it will effect you. The slightest alteration to your diet can have dire consequences. It may be hard to find foods that taste good and won't harm you or effect your diabetes. This holds especially true for sweets and deserts. The key to being able to eat tasty foods as a diabetic is to remember that you should eat these sweets in moderation. So today I am writing this article with a lighter, and certainly tastier, twist.
Aside from certain, store bought, baked goods it is hard to come by diabetic friendly snack foods. It is important to eat healthy but that doesn't mean that you shouldn't be able to treat yourself to a tasty snack every once and awhile. It may be healthier, and certainly tastier, to make a diabetic friendly desert yourself. Store bought diabetic food can taste awful, this is because they can not use sugars to mask the bland flavor of this mass produced garbage.
Today, I will be sharing a special treat with you, a homemade diabetic cheesecake recipe. So enough talk, lets get started.
First you should preheat your oven to 350 degrees.
We will start with the crust. You will need 2 tablespoons of melted light margarine and 1 cup of graham cracker crumbs. Mix the crumbs and margarine together and press them into the bottom of a pre-greased 9inch baking pan.
The next thing that you will need to make is the filling. You will need 24 ounces of soft, light cream cheese, ¼ cup of granulated sugar, ¾ cup of egg substitute, and two tablespoons of flour.
Now you will need to mix the sugar, flour and cream cheese together until the mixture becomes “fluffy”. Then slowly add the egg substitute and beat the mixture until everything is well mixed. Pour the mixture into the baking pan and onto the crust. Cover the pan loosely with some aluminum foil and bake the diabetic cheesecake for 60 to 70 minutes at 350 degrees.
Once the cheesecake is finished let it cool or refrigerate, depending on your preference.
This diabetic cheesecake recipe is a refreshing desert for those of you who are diabetic but looking for a small temporary change in their diet. Again, it is very important, for diabetics, to indulge in this type of food in extreme moderation. Remember this is a very healthy and diabetic friendly cheesecake recipe but it does contain sugar and other carbohydrates. It is important for diabetics to monitor their blood sugar to make sure that they do not spike or drop to unsafe levels.
